Sweet potato pie waffles..

My grandmother makes the best sweet potato pie ever! It’s a declaration and definitely not up for debate. After much research, I’ve found some not so great, blah, and “something is missing” recipes online. If your grandma is stingy like mine (side eye Ola Mae) then you will need an alternative and my food friend Dacy over at deardacy.com has just the recipe. Spoiler Alert - it’s the browned butter and cinnila sugar for me!

So how did we get to a sweet potato pie WAFFLE? Well I picked up 6 sweet potatoes the other day with every intention of making myself two sweet potato pies (Judge ya momma) but then I woke up like oh a brunch would be fun! Anyway.. Make it! Either as a pie the way deardacy.com intended or as a waffle cuz why not?!

This recipe comfortably makes 2 deep dish pies or enough filling for 20 waffles.

You can totally make this ahead of time to save yourself some time when you decide to whip up these sweet potato pie waffles.

A note:

Brown 2 sticks of butter as instructed and set aside for waffle batter.

I reduced the sugar by a half cup (1.5 cups white sugar)

Also no need to add your eggs just yet, save those for the waffles.

Sweet potato pie waffles - Enough batter for 6 waffles

Ingredients:

2 cups AP flour

1 tsp baking soda

1 tsp kosher salt

1 tsp yam seasoning from biglsblends.com

1.5 tsp baking powder

1/4 cup brown sugar

1 cup buttermilk

2 sticks browned butter

2 large eggs (room temp)

2 cups sweet potato pie filling

Step 1:

Prepare your sweet potato pie filling and set aside. Scroll up for notes. Preheat oven to 200

Step 2:

Combine dry ingredients and brown sugar in a large bowl.

Step 3:

In a separate bowl, mix your sweet potato pie filling with one egg at a time until incorporated. Add browned butter as well as buttermilk. Mix together.

Step 4:

Fold in dry ingredients into wet ingredients and rest for 20 mins while waffle iron heats up.

Step 5:

Depending on waffle iron settings - waffles should be ready to pull after 4mins. Place on a cookie sheet and in 200 degree oven to keep warm and cook through.

Now this waffle is sweet. Not cloyingly sweet, but sweet nonetheless less. Serve this as a dessert waffle with fresh whip and berries. Orrrrrrrrr stayed tuned for those smoked pecan maple wings!


Smoked pecan bourbon wings…

Okay this isn’t a recipe, it’s a flavor bomb you should just have in your arsenal in case you want to impress yourself. Everyone knows how to fry chicken so whatever your favorite wing recipe is for golden crisp chicken use that! I’ll share a wing recipe another day.

I found this smoked bourbon maple syrup on my excursion to Chelsea Market and immediately thought WINGS!

Your going to eyeball and adjust this entire sauce. Think sweet, heat, smoke, salt! BALANCE!

Ingredients:

Smoked bourbon maple syrup

Hot sauce or Siracha for extra kick

Kosher salt

1/2 stick unsalted butter

Honey

Brown sugar (1/4 cup)

Toasted pecans, chopped (about 1/2 cup) - do not skip the toasting step

Step 1:

Combine all of the ingredients in a medium saucepan and let reduce.

Step 2:

Take out freshly fried chicken, salt.

Step 3:

In a large mixing bowl, add wing pieces and sauce.
