Fruity Pebbles french toast

Asia another french toast recipe? Yes! French toast is a love language. I posted these pictures on IG (are you following @comfort_butter) and I almost got cussed out in my DM’s. I figured it was safest for everyone if I formally wrote out the recipe. There is a one minute reel on IG if you need a visual of the process.

“Breakfast for dinner” originally started as a need. I was either low on cash or strapped for time when it came about. I needed a meal that wouldn’t hurt the bank and would still feel special. The boys have always loved brunch as much as I do and this was the perfect DIY solution. Enjoy!

Ingredients:

Box of fruity pebbles

1 brioche loaf, sliced

2 cups heavy cream (if you only have milk, use that)

3 egg yolks

1/2 tsp kosher salt

1 tsp cinnamon (I love Yam seasoning from Big L’s)

Zest of an orange

1 tsp orange extract

Unsalted butter for frying

Step 1:

Preheat oven to 250.

Combine cream, yolks, salt, cinnamon, orange zest and extracts in a wide shallow bowl. Whisk together to create the egg custard. In another wide shallow bowl pour in enough fruity pebbles to coat.

Step 2:

Dip each slice of brioche in egg custard, allow excess to drip off, coat both sides with fruit cereal. Lay covered slices on wired rack until entire loaf is dipped and covered. One loaf should yield 10-12 slices depending on thickness. Refrigerate until ready to fry.

Step 3:

In a large stainless steel skillet melt unsalted butter. Heat should be on a med/low flame as sugar tends to burn. Fry each piece of brioche until slightly browned and flip. Cereal will further meld into slices. Put pieces in a waiting 250 degree oven on wired rack to cook all the way through. Serve!
