Tres Leche French Toast

Did you know November 28th is NATIONAL FRENCH TOAST DAY?? Me either! But I love french toast. My everyday salted bourbon french toast would not do for such a special occasion, I needed something over the top!

Enter the TRES LECHE BANANAS FOSTER FRENCH TOAST!

This is a decadent, extravagant, sock it to em, make a baby french toast!

Tres Leche (3 milks) custard:

Ingredients

1 loaf Challah bread (sliced 1 inch thick)

1/2 cup sweetened condensed milk

1/2 cup whole milk

1/2 cup evaporated milk

2 tsp cinnamon

2 tsp brown sugar

1/4 tsp cardamom

3 egg yolks (no whites)

1 tsp kosher salt

Unsalted butter to fry

Vanilla bean paste & extract (enough to make the ancestors happy)

Step 1:

In a large bowl, whisk all ingredients together.

Step 2:

Dunk each piece of buttery challah bread in custard mixture for 20 seconds on each side. Set to the side until its time to fry in the skillet. Place in an oven safe dish to keep warm.

Bananas Foster:

Ingredients

3 ripe bananas, sliced diagonally

4 TBSP unsalted butter

1/4 cup brown sugar

1/4 cup white sugar

1 tsp cinnamon

1 tsp kosher salt

3 TSBP aged rum

Step 1:

Place butter, sugars, salt and cinnamon in a large frying pan until butter is melted.

Step 2:

Add sliced bananas to the melted sugar. Allow bananas to cook down and flip after 7mins.

Step 3:

Pour in the rum. Tilt the pan onto the fire or use long handled lighter to ignite bananas. Flames will burn off the alcohol quickly.

To plate:

Stack 2-3 pieces of french toast on top of each other. Spoon bananas foster right on top. You can add fresh made whip cream if you like. Cut up strawberries and add them to the side of the plate. Spoon over additional caramel butter sauce
